Southern Corn Casserole is a creamy, family-favorite recipe filled with sweet and delicious golden corn kernels.

Cornbread is a staple served with many southern meals. Southern Corn Casserole is an easy (and delicious) play off of everyone’s favorite cornbread.

Thanksgiving dinner in Louisiana features many rice-based dishes, as well as traditional menu items such as gumbo, sweet potatoes, and cornbread.

When we moved from New Orleans, Louisiana to St. Louis, Missouri, we experienced a new array of traditional Midwestern favorites. We visited our family in Columbia, Illinois, a small town around 30 minutes from St. Louis. While our traditional rice dishes were not on the table, we experienced a dish that become a new favorite, Southern Corn Casserole.

After our first Columbia Thanksgiving, we knew we needed to recreate this simple and delicious dish. We wanted a healthier alternative that used less butter and sugar, and came up with our own simple twist. In addition, we loved the idea of serving individual casseroles in a Ramekin, but you can prepare this dish in a baking dish for a true casserole experience.

The two of us love to make this dish for Friendsgiving, Thanksgiving, Christmas, and potlucks. With only 7 ingredients, this dish is simple and easy to create.

What You Will Need to Make Southern Corn Casserole

  1. Whole Corn
  2. Creamed Corn
  3. Cornbread Mix
  4. Eggs
  5. Sour Cream
  6. Unsalted Butter
  7. Avocado Oil

How to Make This Dish

Preparing this dish is simple. First, preheat your oven to 350 degrees F. Spray your Ramekins with a non-stick cooking spray (we use Avocado Oil spray for a healthier alternative). Next, melt your butter in a microwave safe bowl, and set aside. In a large mixing bowl, beat together your eggs and sour cream. Add the Whole Corn, Creamed Corn, Avocado Oil, and Butter. Combine all ingredients together. Next, fold in your Cornbread mix until well combined. Pour the Corn mixture into individual Ramekins, filling each one ½ to ¾ full. Finally, put your filled Ramekins in the oven, and bake for 45 minutes, or until the top reaches a light golden brown. To ensure doneness, insert a toothpick into the middle of your corn casserole, ensuring it comes out clean. Serve warm and enjoy!

Southern Corn Casserole pairs perfectly with Chili, Herb Roasted Turkey Breast, Dijon Chicken with Smothered Shallots, and Instant Pot Cajun Chicken and Sausage Gumbo.

Ingredients

  • 1 can (15 oz) Whole Corn, well drained
  • 1 can (14.75 oz) Creamed Corn
  • 8 oz Cornbread Mix (We use Whole Foods 365 Cornbread & Muffin Mix)
  • 2 Eggs, beaten
  • 1 cup Sour Cream
  • 1/4 cup Unsalted Butter, melted
  • 1/8 cup Avocado Oil

Instructions

  1. Preheat oven to 350 degrees F. Spray your Ramekins with a non-stick cooking spray (we use Avocado Oil spray).

  3. In a large mixing bowl, beat Eggs and Sour Cream together.

  7. Bake for 45 minutes, or until the top reaches a light golden brown. Serve warm!
