Southern Corn Casserole is a creamy, family-favorite recipe filled with sweet and delicious golden corn kernels.

- 1 can (15 oz) Whole Corn, well drained
- 1 can (14.75 oz) Creamed Corn
- 8 oz Cornbread Mix (We use Whole Foods 365 Cornbread & Muffin Mix)
- 2 Eggs, beaten
- 1 cup Sour Cream
- 1/4 cup Unsalted Butter, melted
- 1/8 cup Avocado Oil
Instructions
- Preheat oven to 350 degrees F. Spray your Ramekins with a non-stick cooking spray (we use Avocado Oil spray).
- Melt Butter in a microwave safe bowl, set aside.
- In a large mixing bowl, beat Eggs and Sour Cream together.
- Add Whole Corn, Creamed Corn, Avocado Oil, and Butter to mixing bowl. Combine well.
- Fold in Cornbread mix until well combined.
- Pour Corn mixture into individual Ramekins, filling each one ½ to ¾ full.
- Bake for 45 minutes, or until the top reaches a light golden brown. Serve warm!
