Description

Southern Corn Casserole is a creamy, family-favorite recipe filled with sweet and delicious golden corn kernels.


Ingredients

  • 1 can (15 oz) Whole Corn, well drained
  • 1 can (14.75 oz) Creamed Corn
  • 8 oz Cornbread Mix (We use Whole Foods 365 Cornbread & Muffin Mix)
  • 2 Eggs, beaten
  • 1 cup Sour Cream
  • 1/4 cup Unsalted Butter, melted
  • 1/8 cup Avocado Oil

Instructions

  1. Preheat oven to 350 degrees F. Spray your Ramekins with a non-stick cooking spray (we use Avocado Oil spray).
  2. Melt Butter in a microwave safe bowl, set aside.
  3. In a large mixing bowl, beat Eggs and Sour Cream together.
  4. Add Whole Corn, Creamed Corn, Avocado Oil, and Butter to mixing bowl. Combine well.
  5. Fold in Cornbread mix until well combined.
  6. Pour Corn mixture into individual Ramekins, filling each one ½ to ¾ full.
  7. Bake for 45 minutes, or until the top reaches a light golden brown. Serve warm!
