Growing up in New Orleans, I remember my grandma (and Courtney’s great-grandma) picking her Okra and ripe tomatoes from her backyard kitchen garden.
She would combine these two ingredients into a delicious smothered dish that she would add to her Gumbo recipe. We have learned that these two ingredients make a quick and nutritious side dish the whole family will love.

The vitamin C in Okra helps support healthy immune function. Okra is also rich in vitamin K, which helps your body clot blood.” Okra is also rich in antioxidants, making it a healthy addition to any meal.

- Fire-roasted Tomatoes
- Sliced Okra
- Avocado Oil
- Salt
How to Make Fire Roasted Tomatoes and Okra
First, pour 2 tablespoons of Avocado Oil into your skillet.
Next, add your Okra to the skillet. On medium heat, stir your frozen or fresh Okra until cooked thoroughly, stirring often for about 15 minutes.
When the Okra begins to turn bright green, add your can of fire–roasted tomatoes. Continue to cook until most of the liquid is absorbed, stirring often, approximately 5 to 7 minutes.
Finally, remove from heat and serve hot. Add salt to taste.
This dish pairs perfectly with our Cajun Chicken and Sausage Gumbo or Red Beans and Rice.
