This quiche is the perfect weeknight dinner. With only 10 ingredients, this vegetarian dish is easy to create on a short notice, and tastes delicious. We love the fresh dill, and like to use extra sharp cheddar cheese to make this a super flavorful dish.
What You Will Need to Make This Quiche
- Sliced Mushrooms
- Red Onion
- Pre-Made Frozen Pie Crust
- Shredded Swiss or Cheddar Cheese
- Cream
- Eggs
- Fresh Dill
- Nutmeg
- Avocado Oil
- Salt
How to Freeze Dill
If you want to store your fresh Dill to use for sautéing later, simply snip your Dill and place in an ice tray. Cover the Dill with Olive Oil, and freeze. Once frozen, pop the cubes in a freezer safe bag. Use these cubes in the future to saute your onions in or any other recipe you want a hint of Dill.
How to Freeze Your Quick and Easy Mushroom Quiche
If you are anything like us, you love to have easy meals prepped in the freezer. This quiche freezes great, and is an easy meal to defrost and reheat during the week.
To freeze your quiche, simply slice into individual slices, place on a baking sheet, and freeze. Once frozen, place frozen slices into a ziplock bag and store in the freezer.

Ingredients
- 8 ounce carton of sliced mushrooms
- ½ red onion, chopped
- 9-inch pre-made frozen pie crust, pre cooked for about 5 minutes, pricking the crust with a fork before baking
- 8 ounces of shredded Swiss or Cheddar cheese
- ½ cup of cream (Evaporated Milk or Half and Half)
- 4 eggs, beaten
- 2 to 3 sprigs of fresh dill, pulled from stem and chopped or 1 teaspoon of dried dill
- 1 dash of Nutmeg
- 2 to 3 tablespoons of Olive Oil for sautéing onion and mushrooms
- 1 teaspoon of salt (optional)
Instructions
- Preheat the oven to 350 degrees.
- Place the olive oil in a nonstick skillet. Add the chopped onion and sauté for 5 minutes.
- Add the mushrooms and sauté until cooked through.
- Place the cheese in the bottom of the cooled pie crust. Add the sautéed mushrooms and onion on top of the cheese in the pie crust.
- Add the beaten eggs and cream together, combine well. Add the salt, dash of nutmeg and dill. Mix until well combined.
- Pour the egg mixture on top of the mushrooms and cheese.
- Bake for 45 minutes or until a toothpick comes out clean. Serve hot.
