Description

Fire Roasted Tomatoes and Okra combines only 4 ingredients to create a flavorful and healthy Cajun side dish.


Ingredients

  • 16 oz can of Fire-roasted Tomatoes
  • 16 oz of frozen (or fresh) sliced Okra
  • 2 tablespoons of Avocado Oil
  • Salt

Instructions

  1. Pour 2 tablespoons of Avocado Oil into your skillet.
  2. Add your Okra to the skillet. On medium heat, stir your frozen or fresh Okra until cooked thoroughly,  stirring often for about 15 minutes.  
  3. When the Okra begins to turn bright green, add your can of fire-roasted tomatoes. Continue to cook until most of the liquid is absorbed, stirring often, approximately 5 to 7 minutes.  
  4. Remove from heat and serve hot. Add salt to taste.
