How to Make Lemon Poppy Seed Bread

We highly recommend it! The overnight rest allows the flavors to develop and the crumb to set, which gives you cleaner, more beautiful slices. If you absolutely can’t wait, let it cool completely (at least 2 hours) before slicing.

Can I make this bread gluten-free?

You can try a 1:1 gluten-free all-purpose flour blend, but the texture may vary slightly. We haven’t tested this with gluten-free flour, so results may differ.

How do I know when the bread is done?

Insert a toothpick near the center of the loaf. If it comes out clean or with just a few moist crumbs, the bread is ready. If it comes out with wet batter, bake for an additional 5 minutes and check again.

Why did my bread crack on top?

A crack down the center of a quick bread is completely normal and actually a sign that your bread rose properly! The exterior sets before the interior, and as the center continues to rise, it pushes through the top creating that classic crack.

Can I double this recipe?

Yes! Double all ingredients and use two 8×4-inch loaf pans. Baking time should remain approximately the same, but always check with a toothpick.
