How to Make The Best Grilled Chicken Kabobs
The Southern Spoonful‘s Grilled Chicken Kabobs are easy and delicious.
The first step is to create your easy marinade. Mix together your Coconut Aminos, Olive Oil, and minced Garlic.
If using bamboo or wooden skewers, soak them in water for 30 minutes before grilling.
Next, place the chicken in the marinade and cover it in the refrigerator for 3 hours.
On each skewer, thread one of each color bell pepper, onion, chicken, and mushroom, leaving space between each ingredient to create even cooking.
Place each skewer on the grill, lined in foil or your favorite cast iron griddle.
Turn the kabobs every 6 to 7 minutes until the chicken reaches an internal temperature of 165 degrees, brushing with the additional marinade.

- 1 Green Bell Pepper, cut in 1-inch by 1-inch squares
- 1 Yellow Bell Pepper, cut in 1-inch by 1-inch squares
- 1 Orange Bell Pepper, cut in 1-inch by 1-inch squares
- 1 Red Bell Pepper, cut in 1-inch by 1-inch squares
- 1 cup of Coconut Aminos
- 1 cup of Avocado Oil or Olive Oil
- 1 lb of chicken cubes cut in 1-inch by 1-inch squares
- 4 cloves of minced garlic
- 1 purple onion, chopped into cubes
- Button mushrooms
- Bamboo skewers, soaked in water per package directions
Instructions
- Mix together your Coconut Aminos, Olive Oil, and minced garlic in a small bowl, reserving ¼ cup for brushing the kabobs while grilling.
- Place the chicken in the marinade and cover in the refrigerator for 3 hours.
