Description
Cranberry Orange Bread perfectly blends the sweet juice of oranges with the tartness of cranberries. This bread is the perfect breakfast or dessert for any day of the week.
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon baking soda
- 3/4 cup orange juice (fresh squeezed or bottled orange juice)
- 2 Tablespoons softened butter
- 1 Tablespoon grated orange peel
- 1 egg, beaten
- 1 1/2 cups fresh or frozen cranberries, chopped
- 1/4 cup Walnuts, roughly chopped (optional)
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, mix all the dry ingredients until thoroughly combined (flour, sugar, baking powder, salt, Cinnamon, and baking soda).
- Add the orange juice, butter, orange peel, and beaten egg. Mix until combined (do not overmix, the batter will be a little lumpy).
- Add the chopped cranberries and Walnuts (optional). Stir until combined.
- Pour the batter into a well-greased 10 x 5 bread pan.
- Bake for 45 minutes. Insert a toothpick in the middle of the bread to check for doneness. If the toothpick comes out clean and the edges are slightly pulling away from the side of the pan, your bread is done. If not, continue to bake for 10 additional minutes.
- Let cool for 5 minutes. Slice and serve topped with butter.
