Healthy Pumpkin Bread is packed with fall spices to create the perfect, flavorful bread for breakfast or dessert.


Ingredients

Units Scale
  • 2 1/2 cups of White Flour
  • 1 cup of Almond Flour
  • 4 Eggs
  • 2 cups (1 can) Canned Pumpkin
  • 2 cups White Sugar
  • 1/2 cup Avocado Oil
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • 1 1/2 teaspoons Salt
  • 1 teaspoon Nutmeg
  • 1 teaspoon Pumpkin Spice
  • 6 oz Applesauce
  • 6 oz Water

Instructions

  1. Preheat the oven to 350°F.
  2. Spray 2 nonstick loaf pans (9″ x 5″ x 3″).
  3. Place the dry ingredients in a large bowl and mix well.
  4. In another mixing bowl, pour the pumpkin, applesauce, water, oil, and eggs, beat well with a mixer.
  5. Pour the dry ingredients into the wet ingredients and mix well until well combined.
  6. Pour the batter into the well-greased pans, dividing the batter equally between the two pans.
  7. Bake at 350°F for one hour. After baking, test for doneness by piercing the middle of the bread with a toothpick ensuring it comes out clean. Add additional time if the toothpick does not come out clean, 5 minutes at a time.
