Description

These colorful kabobs are bursting with flavor. Colorful and delicious, these Grilled Chicken Kabobs can be ready in 30 minutes!


Ingredients

Scale
  • 1 Green Bell Pepper, cut in 1-inch by 1-inch squares
  • 1 Yellow Bell Pepper, cut in 1-inch by 1-inch squares
  • 1 Orange Bell Pepper, cut in 1-inch by 1-inch squares
  • 1 Red Bell Pepper, cut in 1-inch by 1-inch squares
  • 1 cup of Coconut Aminos
  • 1 cup of Avocado Oil or Olive Oil
  • 1 lb of chicken cubes cut in 1-inch by 1-inch squares
  • 4 cloves of minced garlic
  • 1 purple onion, chopped into cubes
  • Button mushrooms 
  • Bamboo skewers, soaked in water per package directions

Instructions

  1. Mix together your Coconut Aminos, Olive Oil, and minced garlic in a small bowl, reserving ¼ cup for brushing the kabobs while grilling.
  2. Place the chicken in the marinade and cover in the refrigerator for 3 hours.
  3. On each skewer, thread one of each color bell pepper, onion, chicken, and mushroom, leaving space between each ingredient to evenly cook.
  4. Place each skewer on the grill, lined in foil or your favorite cast iron griddle.
  5. Turn the kabobs every 6 to 7 minutes until the chicken reaches an internal temperature of 165 degrees, brushing with the additional marinade.
