  • Chickpeas (about 270 g, cooked and drained; roughly 1 1/2 cups, or one standard 15-ounce can): Pat them dry before tossing with the oil and spices. That is what helps them crisp up in the oven instead of steaming, and they carry most of the fiber in this dish.
  • Olive oil (3 tablespoons): Coats everything evenly so the spices stick and the vegetables roast instead of steam.
  • Garlic (3 cloves, minced): Mince it fine so it spreads through the whole pan instead of sitting in clumps that scorch.
  • Paprika (1 teaspoon): Regular sweet paprika, not smoked. It gives the pan color and a mild warmth without taking over the lemon in the dressing. When we want to pull this closer to home, we swap it for a tablespoon of our healthy Cajun seasoning.

  4. While the vegetables roast, whisk together the tahini, lemon juice, and water until smooth and pourable, adding more water a teaspoon at a time if it is too thick.
  5. Divide the roasted vegetables and chickpeas among bowls, drizzle with the tahini dressing, and finish with pumpkin seeds.

Tips for the Best Roasted Vegetable Bowl

  • Pat the chickpeas dry with a towel before tossing them with the oil. Extra moisture is the main thing that keeps them from crisping up.
  • Give everything room on the pan. One large sheet pan holds the single batch in an even layer, which is what you want. We use the large Caraway baking sheet. If you double the recipe, spread it across two pans rather than piling it onto one, or the vegetables steam instead of roasting.
  • Cut the sweet potato and carrots to a similar size so they finish roasting at the same time as the broccoli.
  • Stir the tahini jar well before measuring. Tahini separates, and the oil settles on top.
  • Keep the dressing separate if you are portioning this out for the week. It thickens in the fridge, and the vegetables hold up better undressed.

This is the side we reach for when the main is already handled.
