Ingredients to Make This Recipe
Our recipe uses 11 ingredients and, surprisingly, does not use Vodka. To create this dish, you will need:
- Pasta – We use Whole Foods Market Organic Pipe Rigate, but have also used Rigatoni
- Olive Oil
- Onion
- Garlic Cloves
- Tomato Paste
- Sugar
- Calabrian Peppers – We use DIVINA Chopped Calabrian Peppers
- Pasta Water
- Heavy Whipping Cream – We always use Organic Valley Heavy Whipping Cream
- Parmesan Cheese
- Basil
Tips for Preparing Copycat Carbone Spicy Rigatoni
- Saute the Garlic and Onions – Saute your garlic and chopped onions until they are fragrant and slightly caramelized. This step creates depth and richness in the sauce.
- Balance the Heat – We like to use one Tablespoon of Calabrian peppers, but you can always slowly add more until you achieve your desired heat level.
- Don’t Overcook the Pasta – Cook your pasta until it’s al dente. It will continue to cook slightly once you add it to the prepared sauce.
- Garnish Your Dish – We like to add fresh Basil ribbons to add flavor and presentation along with freshly grated Parmesan on top.

How to Freeze Spicy Rigatoni

We have a few tips to ensure that your frozen Spicy Rigatoni maintains its flavor, texture, and quality:
- Cook Al Dente: When preparing the Rigatoni, cook it slightly less than al dente. It will continue to cook when reheated. This helps prevent the pasta from becoming overly soft after freezing.
- Cool Quickly: Allow the cooked pasta to cool down quickly after cooking. You can spread the pasta out on a baking sheet in a single layer or pour cool water over the pasta while in a colander to speed up the cooling process and prevent overcooking.
- Portion Control: Divide the pasta into individual or family-sized portions before freezing.
- Airtight Packaging: Use airtight containers or heavy-duty freezer bags to store the prepared dish. Remove as much air as possible from the bags before sealing to prevent freezer burn and maintain freshness.
- Sauce Consideration: Be aware that because the sauce is dairy-based, it can separate or change in texture after freezing and thawing.
- Thawing and Reheating: When you’re ready to enjoy your frozen pasta, transfer it to the refrigerator to thaw overnight. You can use a stovetop, oven, or microwave to reheat the pasta. Add some water or extra sauce for microwave or stovetop reheating to prevent the pasta from drying out. Cover the dish with aluminum foil if using the oven to prevent excessive browning.
- Taste and Adjust: After reheating, taste and adjust the seasoning if necessary. You might find that the flavors have intensified during freezing, so adding a touch of fresh Basil, a drizzle of olive oil, and grated Parmesan cheese can help balance the dish.

Description

Ingredients
- 1/2 lb Pipe Rigate
- 2–3 Tablespoons olive oil
- 1 onion, finely chopped
- 4–6 garlic cloves, minced
- 6 oz tomato paste
- 1 Tablespoon sugar
- 1–2 Tablespoons Calabrian Peppers
- 1/4 cup pasta water
- 1 pint heavy whipping cream
- 1/4 cup and 3 tablespoons freshly grated Parmesan cheese, divided
- fresh Basil cut in ribbons for garnish
Instructions
- Cook the pasta according to package directions, reserving ¼ cup of the hot pasta water. Place the cooked, drained pasta in a large bowl.
- Pour the olive oil into a heavy-duty pot (one that will fit your pasta noodles and sauce), and place heat on medium-low.
- Add the chopped onion to the olive oil and saute until fragrant, on medium-low heat, 1-2 minutes. Add the minced garlic to the pot and continue to cook for 1-2 minutes.
- Add the tomato paste to the onions and garlic and stir until well combined.
- Add the Calabrian Peppers to the tomato paste and combine until the peppers are well distributed through the sauce. Sprinkle the sugar evenly over the tomato sauce.
- Pour the pasta water into the tomato sauce and stir well.
- Pour the entire pint of whipping cream into the sauce, and stir continuously over low heat until hot and bubbly. Add Parmesan cheese and stir until well combined.
- Pour the pasta into the pot and stir until all of the noodles are covered in the sauce.
- Serve the pasta on a plate, garnishing the pasta with Basil ribbons and remaining Parmesan cheese.
