Description

Cranberry Orange Bread perfectly blends the sweet juice of oranges with the tartness of cranberries. This bread is the perfect breakfast or dessert for any day of the week.

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda

Wet Ingredients:

  • 3/4 cup fresh orange juice (about 2 large oranges)
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 2 tablespoons fresh orange zest

Mix-ins:

  • 1 cup fresh or frozen cranberries (chopped if large)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Prepare Your Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray, then lightly dust with flour to prevent sticking.

  2. Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and baking soda until well combined.

  3. Combine Wet Ingredients: In a separate bowl, mix the fresh orange juice, melted butter, beaten egg, and orange zest until smooth.

  4. Make the Batter: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Don’t overmix – the batter should be slightly lumpy for the most tender bread

  5. Add Cranberries and Nuts: Gently fold in the cranberries and walnuts (if using) until evenly distributed throughout the batter.

  6. Bake the Bread: Pour the batter into your prepared loaf pan and spread evenly. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean and the edges start pulling away from the pan.

  7. Cool and Serve: Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack. Cool for at least 15 minutes before slicing.
