Description

Southern Pimento Cheese is a tantalizing, rich and creamy appetizer, and is perfect served alongside your favorite fresh vegetables and crackers. 


Ingredients

Scale
  • 2 cups shredded extra-sharp Cheddar cheese
  • 8 ounces cream cheese, softened and cut into several pieces 
  • 1 jar of diced Pimientos, drained well
  • 3 – 4 tbsps of Mayonnaise
  • ¼ tsp of garlic powder
  • ¼ tsp of onion powder
  • ¼ tsp of salt
  • ¼ teaspoon of Red Pepper Flakes
  • ¼ teaspoon of Cayenne pepper (optional)
  • Pepper to taste


Instructions

  1. If using a block of extra-sharp Cheddar cheese, shred in food processor
  2. Using a handheld mixer or stand up mixer, beat cheddar cheese, cream cheese, pimentos, mayonnaise, garlic powder, and onion powder, and red pepper flakes. Season with pepper and additional salt to taste.
  3. Serve immediately. If storing in the refrigerator, allow to sit out at room temperature for around 30 minutes to an hour to allow the mixture to soften.

Notes

Be sure that your Pimento peppers are extremely well drained. We also blot ours dry with a paper towel before mixing in.

We purchase our extra-sharp Cheddar cheese in a block and shred in the food processor for extra fresh flavor.
